I have a new love for chia seeds, I’m obsessed! This is just one of the many recipes that calls for chia seeds, and I just love it. Absolutely freakin LOVE IT! It’s so nice to have a different alternative than the usual eggs and bacon for breakfast, not that I am complaining because I looove eggs and bacon, but it is definitely nice to change things up! Chia seeds, in case if you are wondering, are a nutrient dense food that comes from Mexico. They have Omega-3 fatty acids, fiber, protein, and are very high in antioxidants. Win, win! Chia seeds, as I am sure some of you are well aware, are pretty big in the paleo community.
1 cup of milled flaxseed
1 cup of unsweetened shredded coconut
1 cup of chia seeds (optional)
1 tbsp of cinnamon
Liquid stevia to taste
Fruit of your choice to taste (strawberries, blueberries, raspberries)
Heavy Cream to taste
Butter to taste
Mix all the dry ingredients together and keep them in a container. When you are ready, take a scoop of however much you want and put it in a bowl. (fyi- it is VERY filling!) Boil water and pour equal parts in the bowl and add a few slivers of butter and add heavy cream to taste. Then, add the fruit of your choice and then mix it in with the liquid stevia.
